Description

Creamy Sicilian Ricotta Pie is a dessert that transports you to the heart of Italy with each bite.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup sugar
  • 1 large egg
  • Pinch of salt
  • 2 cups ricotta cheese
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • Optional: powdered sugar for dusting

Instructions

  1. Begin by preheating your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, 1/4 cup of sugar, and a pinch of salt. Gradually incorporate the cold, cubed butter by cutting it into the flour mixture until it achieves a texture resembling coarse crumbs. To bring the dough together, add in one large egg and mix until a cohesive dough forms. Evenly press this dough into your greased 9-inch pie pan, making sure to spread it evenly across the bottom and up the sides. Allow this to firm up by refrigerating it for about 15 minutes.
  2. While the crust is chilling, you can begin crafting the luscious ricotta filling. In a separate bowl, combine the ricotta cheese, 3/4 cup of sugar, two large eggs, vanilla extract, and lemon zest. Using a hand mixer, blend these ingredients until smooth and creamy. The key is achieving a smooth filling that will bake evenly without lumps, enhancing the creamy texture you’re aiming for.
  3. With your crust ready and filling prepared, pour the ricotta mixture directly into the pie crust, spreading it evenly. Place the pie in your preheated oven and let it bake for 45 to 50 minutes. The pie should be set in the center and just starting to turn a light golden hue on top. Once baked, remove the pie from the oven and allow it to cool to room temperature. If desired, add a light dusting of powdered sugar for an extra touch of sweetness before serving.

Notes

Serve this pie chilled with a dollop of whipped cream for added luxury, and enjoy with a cup of strong espresso to enhance its Sicilian roots.
