  • 1 loaf of brioche or challah bread (1214 slices)
  • 4 large eggs
  • 1 cup whole milk (or almond/oat milk for dairy-free)
  • 1/2 cup heavy cream (or half-and-half)
  • 1/2 cup granulated sugar (or brown sugar)
  • 1 tablespoon vanilla extract (or vanilla bean paste)
  • 1/2 teaspoon ground cinnamon (or nutmeg)
  • Pinch of salt
  • Additional sugar for brûlée topping

Instructions

  1. Begin by cutting your brioche or challah into thick slices, about three-quarters of an inch. In a greased baking dish, arrange the slices in a slightly overlapping fashion.
  2. In a large mixing bowl, combine the eggs, milk, cream, sugar, vanilla, cinnamon, and salt. Whisk until well blended. Pour evenly over bread slices, gently pressing down.
  3. Preheat your oven to 350°F (175°C) and bake for approximately 25–30 minutes until golden brown and set.
  4. Sprinkle sugar over the top and caramelize with a kitchen torch or under a broiler for 1–2 minutes. Allow cooling before slicing.

Notes

Using slightly stale bread enhances custard absorption, resulting in richer taste. Prepare the dish overnight for convenience. For dairy-free, use almond/oat milk and coconut cream. For gluten-free, substitute with appropriate bread.
