Ingredients
Scale
- 1 cup unsalted butter
- 8 oz semi-sweet chocolate, chopped
- 2 cups white sugar
- 4 large eggs
- 2 tsp vanilla extract
- 3/4 cup cocoa powder
- 3/4 cup all-purpose flour
- 1/2 tsp salt
- 2/3 cup unsalted butter, softened (for frosting)
- 2 1/2 cups powdered sugar
- 3–4 tbsp Baileys Irish Cream
- 8 oz semi-sweet chocolate, finely chopped (for ganache)
- 1/2 cup Baileys Irish Cream (for ganache)
Instructions
- Start by preheating your oven to 350°F (180°C) and prepare your baking pan. Line a 9×13-inch pan with parchment paper, allowing some overhang on the sides for easier removal later. Next, melt the butter and chopped chocolate together in a heatproof bowl. This can be done using a microwave, heating in one-minute intervals, stirring until smooth.
- Once melted, add the sugar directly into the bowl, whisking until well combined. Then, beat in the eggs one at a time, following up with the vanilla extract. It’s important to fold in the dry ingredients gently—cocoa powder, flour, and salt—ensuring not to overmix the batter. Finally, pour the batter into the lined pan, and bake for 32–37 minutes. You’ll know they’re done when a toothpick inserted comes out clean or with just a few moist crumbs. Allow these to cool completely.
- Once the brownies are completely cool, it’s time to whip up the delicious Baileys frosting. Start by beating the softened butter in a mixing bowl until it becomes smooth and creamy. Gradually incorporate the powdered sugar, alternating with 3 to 4 tablespoons of Baileys Irish Cream. This gradual addition will help achieve a perfectly sweet and creamy frosting. Adjust the amount of Baileys to suit your preference for flavor and consistency.
- Once the frosting is well-mixed and has reached the desired consistency, spread it generously over the cooled brownies, smoothing the top for a neat finish. For best results, chill the frosted brownies in the refrigerator for about 20 minutes to firm up the frosting.
- While the frosting sets, you can prepare the Baileys ganache. Place the chopped semi-sweet chocolate in another heatproof bowl. Heat the Baileys in the microwave until it’s almost boiling, then pour it over the chocolate. Allow it to sit for about two minutes before whisking until it becomes smooth and glossy. Pour this luscious ganache over the frosted brownies, ensuring an even spread across the surface. Refrigerate the entire pan until the ganache is firm.
- Once everything has set, use the parchment overhang to lift the brownies out of the pan. Place them on a cutting board, and using a sharp knife, slice them into squares. It’s best to slice while they’re cold for optimal clean edges. Now you’re ready to enjoy the decadence of your Baileys brownies!
