Instructions
- Begin by preheating your oven to 350°F (175°C). Line your cupcake tin with paper liners to make it easier to remove the cupcakes once baked.
- In a large bowl, sift together the flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt.
- Add the vegetable oil, buttermilk, eggs, and vanilla extract. Using a whisk or electric mixer, mix until smooth and well combined.
- Carefully pour the batter into the prepared cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick comes out clean.
- In a separate bowl, beat together the creamy peanut butter, powdered sugar, and milk until light and fluffy.
- Once the cupcakes have cooled, use a knife to cut a hole in the center of each. Fill with peanut butter mixture and pipe additional frosting on top.
