- 1/2 cup unsalted butter
- 3/4 cup semisweet chocolate chips
- 1/4 cup smooth peanut butter
- 2 large eggs
- 2 large egg yolks
- 1/2 cup powdered sugar
- 1/4 cup all-purpose flour
- Pinch of salt
- 1 tablespoon unsweetened cocoa powder
- Extra peanut butter (for the molten center)
Instructions
- Start by preheating your oven to 425°F (220°C). While the oven warms up, take your four 6-ounce ramekins and thoroughly grease them with butter or cooking spray. Follow that up with a light dusting of flour to ensure the cakes release perfectly after baking.
- Next, grab a microwave-safe bowl and add the unsalted butter, semisweet chocolate chips, and smooth peanut butter. Microwave in 30-second intervals, stirring each time until the mixture is completely smooth and melted.
- In a separate bowl, whisk together the two large eggs, two large egg yolks, powdered sugar, and a pinch of salt until the mixture is light and fluffy. Once combined, gently fold in the warm chocolate and peanut butter mixture until fully incorporated.
- Now it’s time to add the flour and cocoa powder. Using a spatula, carefully fold in these dry ingredients until just combined.
- Spoon the batter into your prepared ramekins. Fill each ramekin about halfway with batter, adding one tablespoon of peanut butter in the center of each. Cover with remaining batter until the ramekins are about three-quarters full.
- Place the filled ramekins in the preheated oven and bake for 12-14 minutes. Once baked, let them cool for about 2 minutes in the ramekins.
- Carefully invert the ramekins onto plates to release the cakes. Enjoy warm, adorned with vanilla ice cream or whipped cream.
Notes
Make sure you don’t overmix the batter to keep the cake light and airy. If you can’t find ramekins, you can use muffin tins lined with paper liners.
