Ingredients

  • 2 cups walnuts, finely ground
  • 1 cup sugar
  • 4 large eggs, separated
  • 1/4 cup vegetable oil
  • 1/2 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a medium bowl, beat together egg yolks and sugar until pale and creamy.
  3. Add finely ground walnuts, baking powder, vanilla extract, and vegetable oil. Stir until well combined.
  4. In a separate bowl, whisk egg whites with a pinch of salt until stiff peaks form.
  5. Gently fold the egg whites into the walnut mixture.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes.
  7. Cool the cake in the pan for 10 minutes then transfer to a wire rack, dust with powdered sugar.
