- 2 cups walnuts, finely ground
- 1 cup sugar
- 4 large eggs, separated
- 1/4 cup vegetable oil
- 1/2 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, beat together egg yolks and sugar until pale and creamy.
- Add finely ground walnuts, baking powder, vanilla extract, and vegetable oil. Stir until well combined.
- In a separate bowl, whisk egg whites with a pinch of salt until stiff peaks form.
- Gently fold the egg whites into the walnut mixture.
- Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes.
- Cool the cake in the pan for 10 minutes then transfer to a wire rack, dust with powdered sugar.
