Instructions
- Preheat your oven to 350°F (175°C) and prep your muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until fully incorporated.
- Alternately add the dry ingredients and buttermilk to the wet mixture, mixing gently until just combined.
- Fold in the chocolate chunks and walnuts if using.
- Divide the batter among muffin cups and drizzle with caramel sauce.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Drizzle with additional caramel before serving.
