  • 2 large eggs

  • 1/2 cup strong brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • 1 tablespoon granulated sugar (for coffee soak)
  • 8 oz mascarpone cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for frosting)
  • Unsweetened cocoa powder (for dusting)
  • Optional chocolate shavings (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line muffin cups with cupcake liners.
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Alternately add the flour mixture and milk to the butter mixture until smooth.
  6. Scoop batter into the lined cups and bake for 18-20 minutes.
  7. Prepare the coffee soak with coffee, optional liqueur, and sugar.
  8. Poke holes in cooled cupcakes and spoon coffee soak over them.
  9. Beat mascarpone, cream, powdered sugar, and vanilla until peaks form for frosting.
  10. Frost cupcakes and dust with cocoa powder, adding shavings if desired.
  11. Chill for 30 minutes before serving.
