Instructions
- Preheat the oven to 350°F (175°C) and line muffin cups with cupcake liners.
- In a mixing bowl, whisk together flour, baking powder, and salt.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla extract.
- Alternately add the flour mixture and milk to the butter mixture until smooth.
- Scoop batter into the lined cups and bake for 18-20 minutes.
- Prepare the coffee soak with coffee, optional liqueur, and sugar.
- Poke holes in cooled cupcakes and spoon coffee soak over them.
- Beat mascarpone, cream, powdered sugar, and vanilla until peaks form for frosting.
- Frost cupcakes and dust with cocoa powder, adding shavings if desired.
- Chill for 30 minutes before serving.
