Instructions
- Prepare the oven by preheating to 350°F (175°C) and greasing and flouring two 8-inch round cake pans.
- Combine the flour, baking powder, baking soda, and salt in a mixing bowl and set aside.
- Cream the butter and sugar together until light and fluffy.
- Add the eggs, mashed bananas, and vanilla to the mixture and mix well.
- Alternate adding dry ingredients and buttermilk to the batter, mixing without overmixing.
- Fold in the chopped pecans gently.
- Divide batter between prepared pans and bake for 25-30 minutes until done. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat the butter until creamy, then add powdered sugar, vanilla, and heavy cream until fluffy.
- Assemble the cake by layering banana slices and caramel sauce between the layers.
- Frost the top and sides of the cake, then garnish with caramel sauce, chopped pecans, and banana slices.
