These Berry Swirl Cheesecake Bites combine rich cheesecake with a fruity berry swirl, perfect for parties and indulgence.

- 1 cup graham cracker crumbs
- 2 tbsp granulated sugar
- 4 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 1 cup fresh or frozen berries (strawberries, raspberries, or blueberries)
- 2 tbsp sugar
- 1 tsp lemon juice
Instructions
- Preheat your oven to 325°F (165°C). Line a mini muffin tin with paper liners. Mix graham cracker crumbs, sugar, and melted butter. Press into liners and bake for 5 minutes. Cool.
- Cook berries, sugar, and lemon juice in a saucepan over medium heat for 5 minutes. Strain out seeds and cool.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Mix until creamy.
- Fill crusts with cheesecake filling. Add berry sauce dots and swirl with a toothpick.
- Bake for 15-18 minutes. Cool 10 minutes in pan, then on wire rack.
- Refrigerate for 2 hours. Garnish with berries or whipped cream before serving.

Use room temperature ingredients for best consistency and flavor. Cool gradually to avoid cracking.
