Description

These Berry Swirl Cheesecake Bites combine rich cheesecake with a fruity berry swirl, perfect for parties and indulgence.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup fresh or frozen berries (strawberries, raspberries, or blueberries)
  • 2 tbsp sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat your oven to 325°F (165°C). Line a mini muffin tin with paper liners. Mix graham cracker crumbs, sugar, and melted butter. Press into liners and bake for 5 minutes. Cool.
  2. Cook berries, sugar, and lemon juice in a saucepan over medium heat for 5 minutes. Strain out seeds and cool.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Mix until creamy.
  4. Fill crusts with cheesecake filling. Add berry sauce dots and swirl with a toothpick.
  5. Bake for 15-18 minutes. Cool 10 minutes in pan, then on wire rack.
  6. Refrigerate for 2 hours. Garnish with berries or whipped cream before serving.

Notes

Use room temperature ingredients for best consistency and flavor. Cool gradually to avoid cracking.
