Ingredients

  • ½ cup heavy whipping cream
  • 1 tsp salt
  • 10 oz fresh blueberries
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh thyme
  • 12 slices French baguette (½-inch thick)
  • 4 tbsp melted butter
  • 1 garlic clove, peeled
  • Balsamic reduction, for drizzling

Instructions

  1. Get started by beating together 8 oz of goat cheese, ½ cup of heavy whipping cream, and 1 tsp of salt in a medium-sized bowl. Use a hand mixer to whip the mixture into a smooth and fluffy consistency.
  2. In another bowl, combine 10 oz of fresh blueberries, zest of 1 lemon, 1 tbsp of lemon juice, and 1 tbsp of chopped fresh thyme. Gently toss until the blueberries are well coated.
  3. Brush 12 slices of French baguette with 4 tbsp of melted butter. Preheat a skillet over medium heat and toast the bread, allowing each side to turn golden and crispy, approximately 2–3 minutes per side.
  4. With all components ready, take each toasted baguette slice and generously spread the whipped goat cheese over one side. Follow up by adding a spoonful of the blueberry mixture on top.
  5. Complete the crostini by drizzling a balsamic reduction over each slice. Serve immediately.

Notes

The goat cheese can be whipped in advance and stored in the fridge for up to 24 hours for an easy day-of assembly.
