- 8 oz goat cheese
- ½ cup heavy whipping cream
- 1 tsp salt
- 10 oz fresh blueberries
- Zest of 1 lemon
- 1 tbsp lemon juice
- 1 tbsp chopped fresh thyme
- 12 slices French baguette (½-inch thick)
- 4 tbsp melted butter
- 1 garlic clove, peeled
- Balsamic reduction, for drizzling
Instructions
- Get started by beating together 8 oz of goat cheese, ½ cup of heavy whipping cream, and 1 tsp of salt in a medium-sized bowl. Use a hand mixer to whip the mixture into a smooth and fluffy consistency.
- In another bowl, combine 10 oz of fresh blueberries, zest of 1 lemon, 1 tbsp of lemon juice, and 1 tbsp of chopped fresh thyme. Gently toss until the blueberries are well coated.
- Brush 12 slices of French baguette with 4 tbsp of melted butter. Preheat a skillet over medium heat and toast the bread, allowing each side to turn golden and crispy, approximately 2–3 minutes per side.
- With all components ready, take each toasted baguette slice and generously spread the whipped goat cheese over one side. Follow up by adding a spoonful of the blueberry mixture on top.
- Complete the crostini by drizzling a balsamic reduction over each slice. Serve immediately.
Notes
The goat cheese can be whipped in advance and stored in the fridge for up to 24 hours for an easy day-of assembly.
