Ingredients

  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 8 ounces cream cheese, softened
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 2 tablespoons fresh chives, finely chopped

Instructions

  1. Begin by slicing the yellow onions thinly, ensuring uniformity for even cooking.
  2. Heat the unsalted butter and olive oil in your skillet over medium heat until the butter is fully melted. Add the sliced onions along with a sprinkle of salt. Stir well to coat the onions with the buttery mixture.
  3. Reduce the heat to medium-low and let the onions cook for 30 to 45 minutes, stirring occasionally.
  4. Once the onions are beautifully caramelized, stir in the minced garlic and black pepper during the last 2 to 3 minutes of cooking.
  5. In a separate mixing bowl, beat the softened cream cheese until it’s smooth and creamy. Gradually blend in the sour cream and mayonnaise.
  6. Now, fold in the cooled caramelized onion mixture into the creamy base until well mixed. Lastly, gently stir in the chopped chives.
