- 1 ½ cups all-purpose flour
- ½ cup cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup buttermilk
- ½ cup hot water
- 1 cup fresh cherries, pitted and halved
- 1 cup dark chocolate ganache (homemade or store-bought)
- Fresh cherries for decoration
Instructions
- Start by preheating your oven to 350°F (175°C). Grease your 8-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, mix together all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar using an electric mixer until light and fluffy. Add the eggs, mixing until fully incorporated. Stir in the vanilla extract.
- Carefully add the dry ingredient mixture to your creamed butter and sugar, alternating with the buttermilk.
- Incorporate the hot water and gently fold in the halved cherries.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes until a toothpick comes out clean.
- After the cake has cooled, spread the dark chocolate ganache generously over the top and finish with halved cherries.
