- Begin by making the mint cream. In a medium-sized bowl, cream together the powdered sugar, softened butter, heavy cream, and peppermint extract. Mix until a thick dough forms. For a visual touch, add a drop or two of green food coloring and stir until evenly dispersed. Adjust the texture by adding a bit more cream if dry, or more sugar if sticky.
- Roll the dough into 1-inch balls, then gently press them to form discs. Arrange these discs on a parchment-lined baking sheet, ensuring some space in between. Place the sheet in the freezer for about 20–30 minutes to let them firm up.
- As the mint creams chill, melt the chocolate. Combine the chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second intervals, and stirring each time until smooth and melted. Once the creams are firm, dip each one in the chocolate using a fork. Allow excess chocolate to drip off before setting them back on the parchment-lined sheet.
- With the creams dipped and placed on the tray, return them to the refrigerator for about 15 minutes. This cooling period will set the chocolate to a firm consistency, ready for serving.
