Chocolate Peanut Butter Crunch Cups are a delightful no-bake treat combining creamy peanut butter and crispy rice cereal enveloped in semi-sweet chocolate.

- 1 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 2 1/2 cups crispy rice cereal
- 1 1/2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil
- Sea salt, for topping (optional)
Instructions
- Line a muffin tin with paper liners.
- Place a saucepan over low heat, add creamy peanut butter and honey/maple syrup, stirring until smooth.
- Remove from heat, fold in crispy rice cereal.
- Spoon mixture into muffin liners, pressing down gently.
- Melt chocolate chips with coconut oil in the microwave.
- Pour melted chocolate over the peanut butter bases, sprinkling sea salt on top if desired.
- Refrigerate until set, at least one hour.
Notes
For firmer cups, leave in the refrigerator longer. Substitute coconut oil with vegetable oil or butter if needed.
