Description

Chocolate Peanut Butter Crunch Cups are a delightful no-bake treat combining creamy peanut butter and crispy rice cereal enveloped in semi-sweet chocolate.


Ingredients

  • 1 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 2 1/2 cups crispy rice cereal
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • Sea salt, for topping (optional)

Instructions

  1. Line a muffin tin with paper liners.
  2. Place a saucepan over low heat, add creamy peanut butter and honey/maple syrup, stirring until smooth.
  3. Remove from heat, fold in crispy rice cereal.
  4. Spoon mixture into muffin liners, pressing down gently.
  5. Melt chocolate chips with coconut oil in the microwave.
  6. Pour melted chocolate over the peanut butter bases, sprinkling sea salt on top if desired.
  7. Refrigerate until set, at least one hour.

Notes

For firmer cups, leave in the refrigerator longer. Substitute coconut oil with vegetable oil or butter if needed.
