- 1/2 cup unsweetened cocoa powder
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup whole milk
- 1 teaspoon pure vanilla extract
- 1/2 cup hot water or brewed coffee
- 1/2 cup strawberry jam
- 1 cup heavy cream
- 8 oz dark or semi-sweet chocolate
- 1 cup unsalted butter
- 2 1/2 cups powdered sugar
- 1/4 cup strawberry puree
- 1/2 teaspoon vanilla extract
- 1 pinch salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- Sift together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat eggs and sugar until fluffy. Add oil, milk, and vanilla.
- Fold dry ingredients into wet mixture, then add hot water or coffee gradually.
- Pour batter into liners and bake for 18-22 minutes. Cool on a wire rack.
- Once cool, core each cupcake and fill with strawberry jam.
- Make ganache by heating cream, pouring over chocolate, and stirring until smooth.
- Frost cupcakes with ganache and decorate as desired.
