Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1/2 cup hot water or brewed coffee
  • 1/2 cup strawberry jam
  • 1 cup heavy cream
  • 8 oz dark or semi-sweet chocolate
  • 1 cup unsalted butter
  • 2 1/2 cups powdered sugar
  • 1/4 cup strawberry puree
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. Sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs and sugar until fluffy. Add oil, milk, and vanilla.
  4. Fold dry ingredients into wet mixture, then add hot water or coffee gradually.
  5. Pour batter into liners and bake for 18-22 minutes. Cool on a wire rack.
  6. Once cool, core each cupcake and fill with strawberry jam.
  7. Make ganache by heating cream, pouring over chocolate, and stirring until smooth.
  8. Frost cupcakes with ganache and decorate as desired.
