Instructions
- Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Add in the large egg and vanilla extract; mix until well combined.
- In a separate bowl, whisk together all-purpose flour, baking powder, salt, and ground cinnamon. Gradually add this to the wet ingredients.
- Prepare the cheesecake filling by whisking together the softened cream cheese, powdered sugar, and milk until smooth.
- Shape the cookies by scooping out dough, flattening, adding the cheesecake filling, and sealing with another dough disc.
- Bake for 10-12 minutes or until golden brown.
- Brush with melted butter and roll in cinnamon-sugar mixture after cooling.
