  • 1 tablespoon lemon zest
  • 1/2 cup fresh lemon juice
  • 1/2 cup all-purpose flour (for the filling)
  • 1 cup whole-berry cranberry sauce

Instructions

  1. Start by preheating your oven to 350°F (175°C) and lining a 9 x 9-inch baking pan with parchment paper. In a mixing bowl, beat the softened butter and 1/4 cup granulated sugar until light and fluffy.
  2. Add the vanilla extract to the butter and sugar mixture. Gradually mix in 1 cup of all-purpose flour; press the mixture into the prepared baking pan. Bake for 20-25 minutes until golden brown.
  3. In a separate bowl, whisk together the four eggs, 1 1/4 cups of granulated sugar, lemon zest, and fresh lemon juice. Sift in 1/2 cup of flour to thicken the filling and stir gently.
  4. Spread whole-berry cranberry sauce over the baked crust. Pour the lemon mixture over the cranberry layer and bake for an additional 30-35 minutes.
  5. Let cool completely before refrigerating for several hours or overnight, then dust with powdered sugar before serving.
