Description
This delightful side dish showcases the natural elegance of tender spinach leaves enveloped in a rich, creamy sauce that is simply irresistible.
Ingredients
Scale
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound fresh spinach, stems removed and chopped (or 1 pound frozen spinach, thawed and drained)
- 1/4 cup grated Parmesan cheese
Instructions
- Begin by heating a large skillet over medium heat. Add the unsalted butter and let it melt completely. Once melted, toss in the finely chopped onion. Sauté for about 4-5 minutes, stirring occasionally, until the onion becomes soft and translucent.
- Next, stir in the minced garlic and allow it to cook for about 30 seconds until fragrant. Be cautious not to let the garlic burn. Sprinkle the all-purpose flour over the onions and garlic, and cook while stirring continuously for about 1 minute.
- Slowly pour in the whole milk and heavy cream, whisking constantly to ensure a smooth consistency. Continue to whisk until the mixture thickens, approximately 3-5 minutes.
- At this point, stir in the ground nutmeg, salt, and black pepper. Gradually add the chopped fresh spinach in batches, stirring until it wilts and blends harmoniously into the creamy mixture.
- Allow the creamed spinach to cook for an additional 2-3 minutes, ensuring it is heated through. Finally, stir in the grated Parmesan cheese, mixing until it melts completely.
