Description

A tantalizing pineapple cake that's a fusion of fruity and decadent flavors, perfect for festive occasions or afternoon tea.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1/2 cup pineapple juice
  • 1/2 cup pineapple chunks (for topping)
  • 1/2 cup sweetened condensed milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then add vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry mixture to the wet, alternating with milk, starting and ending with flour mixture.
  6. Fold in the crushed pineapple and pineapple juice gently.
  7. Pour batter into the pan and bake for 30-35 minutes. Check doneness with a toothpick.
  8. Mix sweetened condensed milk with pineapple juice for glaze. Poke holes in the cooled cake and pour glaze over.
  9. Top with pineapple chunks and allow the cake to cool completely before serving.

Notes

Ensure that the crushed pineapple is well-drained to prevent an overly wet batter. The cake can be stored in an airtight container for several days, allowing the glaze to develop its flavor further.
