Description
A tantalizing pineapple cake that's a fusion of fruity and decadent flavors, perfect for festive occasions or afternoon tea.
Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup crushed pineapple, drained
- 1/2 cup pineapple juice
- 1/2 cup pineapple chunks (for topping)
- 1/2 cup sweetened condensed milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
- Cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition, then add vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry mixture to the wet, alternating with milk, starting and ending with flour mixture.
- Fold in the crushed pineapple and pineapple juice gently.
- Pour batter into the pan and bake for 30-35 minutes. Check doneness with a toothpick.
- Mix sweetened condensed milk with pineapple juice for glaze. Poke holes in the cooled cake and pour glaze over.
- Top with pineapple chunks and allow the cake to cool completely before serving.
Notes
Ensure that the crushed pineapple is well-drained to prevent an overly wet batter. The cake can be stored in an airtight container for several days, allowing the glaze to develop its flavor further.
