Instructions
- Begin by combining your graham cracker crumbs, sugar, and melted butter in a mixing bowl. Stir and press into a greased 8×8 inch dish.
- Pre-bake the crust at 325°F (165°C) for 10 minutes then set aside.
- In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, lemon zest, and lemon juice.
- Pour the cheesecake mixture over the crust. Dot with lemon curd and swirl with a knife.
- Bake for 35-40 minutes until the center is lightly set. Cool and refrigerate for at least 3 hours before serving.
