Irresistible mini peach cobblers packed with gooey peaches and sweet batter, baked to perfection!


Ingredients

  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 teaspoon vanilla extract (optional)
  • 1 can (15 oz) sliced peaches in syrup
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Begin by greasing a 12-cup muffin tin with melted butter.
  2. Pour about ½ tablespoon of melted butter into each muffin cup.
  3. In a mixing bowl, whisk together the flour, granulated sugar, and baking powder. Add the milk and vanilla extract, stirring until smooth.
  4. Pour approximately 2 tablespoons of batter into each muffin cup.
  5. Place 1 to 2 peach slices into each cup, including some syrup.
  6. Sprinkle a pinch of ground cinnamon on top of each mini cobbler.
  7. Bake for 25–30 minutes, or until golden brown and bubbly.
  8. Cool in the pan for 5–10 minutes before serving.
