- 3 cups fresh or frozen peaches, chopped
- 1 tablespoon lemon juice
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cold butter, cubed
- 1 teaspoon vanilla extract
Instructions
- Start by preheating your oven to 350°F (175°C). Grease or line a 9×9-inch baking pan.
- In a medium bowl, combine the peaches, lemon juice, sugar, and cornstarch.
- In a large bowl, whisk together flour, oats, brown sugar, baking powder, and salt.
- Add cold butter and mix until the mixture resembles coarse crumbs.
- Stir in vanilla extract.
- Press about two-thirds of the crumble mixture into the bottom of the pan.
- Pour and distribute the peach mixture evenly over the crust.
- Sprinkle the remaining crumble mixture on top.
- Bake for 35-40 minutes until golden brown and bubbly.
- Allow to cool for at least 15 minutes before slicing.
Notes
Make sure to use ripe peaches for the best flavor.
