Ingredients

  • 3 cups fresh or frozen peaches, chopped
  • 1 tablespoon lemon juice
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1 teaspoon vanilla extract

Instructions

  1. Start by preheating your oven to 350°F (175°C). Grease or line a 9×9-inch baking pan.
  2. In a medium bowl, combine the peaches, lemon juice, sugar, and cornstarch.
  3. In a large bowl, whisk together flour, oats, brown sugar, baking powder, and salt.
  4. Add cold butter and mix until the mixture resembles coarse crumbs.
  5. Stir in vanilla extract.
  6. Press about two-thirds of the crumble mixture into the bottom of the pan.
  7. Pour and distribute the peach mixture evenly over the crust.
  8. Sprinkle the remaining crumble mixture on top.
  9. Bake for 35-40 minutes until golden brown and bubbly.
  10. Allow to cool for at least 15 minutes before slicing.

Notes

Make sure to use ripe peaches for the best flavor.
