- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chopped Butterfinger candy bars (about 3 regular bars)
- Extra Butterfinger bits for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened unsalted butter and creamy peanut butter until fluffy. Gradually add the granulated sugar and brown sugar, beating until well combined.
- Incorporate the large egg and vanilla extract, mixing until well combined.
- Sift together the all-purpose flour, baking soda, and salt in a separate bowl. Gradually add this dry mixture to the wet ingredients, mixing just until incorporated.
- Fold in the chopped Butterfinger pieces until evenly distributed throughout the dough.
- Scoop rounded portions of dough onto the prepared baking sheet and press additional Butterfinger bits on top if desired. Bake for 9-11 minutes until the edges are golden and the centers are set.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For best results, ensure your butter is at room temperature. If you prefer softer cookies, take them out of the oven just before they look fully baked. You can freeze the cookie dough in advance.
