These Peanut Butter Choc Chip S’mores are a delicious twist on the classic campfire favorite, combining creamy peanut butter, gooey marshmallows, and luscious chocolate nestled between soft and chewy cookies.

- 250 g creamy peanut butter
- 200 g granulated sugar
- 1 large egg
- 5 ml vanilla extract
- 135 g semi-sweet chocolate chips
- 18 peanut butter chocolate chip cookies
- 9 squares dark chocolate
- 9 large marshmallows
Instructions
- Begin by preheating your oven to 180°C (350°F) and lining a baking sheet with parchment paper.
- In a stand mixer bowl, combine the creamy peanut butter, granulated sugar, egg, and vanilla extract, mixing until smooth. Fold in the semi-sweet chocolate chips.
- Using a tablespoon, portion out dough and roll into balls, placing them on the baking sheet.
- Bake for around 10 minutes until edges are golden brown. Let cool on a wire rack.
- Assemble by placing dark chocolate on cookies, toasting marshmallows, and sandwiching with another cookie.
Notes
Ensure cookies are completely cooled before assembly to maintain chocolate texture.
