Ingredients

  • 1/4 cup unsalted butter (for topping)
  • 1/2 cup packed light brown sugar
  • 810 pineapple rings (canned or fresh)
  • Maraschino cherries (optional)
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Melt 1/4 cup of unsalted butter in your baking pan directly over low heat or by placing it in the warm oven. Once melted, sprinkle the packed light brown sugar over the butter.
  2. Align pineapple rings across the sugar and butter mixture and optionally add a maraschino cherry into the center of each pineapple ring.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Cream the remaining 1/2 cup of softened butter with granulated sugar. Beat until light and fluffy. Gradually incorporate the eggs, one at a time, followed by the vanilla extract.
  5. Alternately fold in the flour mixture and milk into the creamed butter mixture.
  6. Pour the batter over the pineapples, spread evenly, and bake at 350°F (175°C) for 40–45 minutes.

Notes

Serve warm with vanilla ice cream or enjoy at room temperature.
