- 2 tablespoons pistachio butter
- 1/4 cup powdered sugar

- 1/4 cup chopped pistachios (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter with powdered sugar until light and fluffy.
- Add vanilla extract and mix until well incorporated.
- Gradually sift in the flour, salt, and ground pistachios. Stir until a cohesive dough forms.
- Roll out the dough to about 1/4 inch thickness and cut out shapes with a cookie cutter.
- Place cookies on the baking sheet with space between them and bake for 12-14 minutes until golden brown.
- Let the cookies cool completely on a wire rack.
- In another bowl, whip together the filling ingredients until soft peaks form.
- Spread the pistachio cream filling between two cooled cookies to create sandwiches.
- Refrigerate the cookies for at least 30 minutes to set the filling.
