  • 2 cups all-purpose flour

  • 1/4 cup finely ground pistachios
  • For the Pistachio Cream Filling:
  • 1/2 cup heavy cream
  • 2 tablespoons pistachio butter
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pistachios (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter with powdered sugar until light and fluffy.
  3. Add vanilla extract and mix until well incorporated.
  4. Gradually sift in the flour, salt, and ground pistachios. Stir until a cohesive dough forms.
  5. Roll out the dough to about 1/4 inch thickness and cut out shapes with a cookie cutter.
  6. Place cookies on the baking sheet with space between them and bake for 12-14 minutes until golden brown.
  7. Let the cookies cool completely on a wire rack.
  8. In another bowl, whip together the filling ingredients until soft peaks form.
  9. Spread the pistachio cream filling between two cooled cookies to create sandwiches.
  10. Refrigerate the cookies for at least 30 minutes to set the filling.
