Description

Red Velvet Pancakes are a fabulous way to kick-start your day with joy and indulgence.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons unsweetened natural cocoa powder
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring (or beet powder for natural coloring)
  • 4 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 23 tablespoons milk or cream (for adjusting glaze consistency)

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt. This combination of dry ingredients is what gives your pancakes their structure and lift, so make sure everything is well blended to avoid any clumps.
  2. In another bowl, pour in the buttermilk, crack in the eggs, add the melted butter, vanilla extract, and red food coloring. Whisk these ingredients together until they are well combined. This mixture creates a moist pancake texture that pairs beautifully with your dry ingredients.
  3. Pour the wet mixture into your bowl of dry ingredients. Gently stir the two together until just combined; it’s normal for the batter to be a bit lumpy. Be careful not to overmix, as this can lead to tougher pancakes. Once combined, let the batter rest for about 5 minutes while you preheat your skillet to medium heat.
  4. Spray or brush your non-stick skillet lightly with oil or butter for cooking. Pour about 1/4 cup of batter for each pancake onto the hot skillet. Cook for 2-3 minutes until you start to see bubbles forming on the surface and the edges appear set. Once this happens, flip the pancake and let it cook for an additional 1-2 minutes. You want a beautiful golden-brown color, so keep an eye on them!
  5. While the pancakes are cooking, get your cream cheese glaze ready. In a small bowl, beat the softened cream cheese until it’s smooth and creamy. Gradually mix in your powdered sugar, then add milk or cream, one tablespoon at a time, until you reach your desired consistency. You want the glaze to be pourable but thick enough to cling to your pancakes.
  6. Once your pancakes are done cooking, stack them high on a plate and generously drizzle your warm cream cheese glaze over the top. For an extra touch, consider serving alongside fresh berries, crispy bacon, or a hot cup of coffee. Each bite of these Red Velvet Pancakes will melt in your mouth!

Notes

Let the batter rest for a few minutes before cooking; this helps improve the fluffiness of your pancakes.
