- 1 tbsp instant dry yeast
- 4¼ cups all-purpose flour
- ⅓ cup granulated sugar
- 1 tsp salt
- 1 large egg, room temperature
- ⅓ cup unsalted butter, very soft
- 1¾ cups fresh or frozen strawberries
- ¼ cup granulated sugar (for filling)
- Juice of half a lemon
- ½ cup cream cheese, softened
- 3 tbsp unsalted butter, softened (for glaze)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp strawberry puree (reserved from filling), cold
Instructions
- To create the luscious strawberry filling, start by combining the strawberries, lemon juice, and ¼ cup of sugar in a medium saucepan. Cook this mixture over medium heat for about ten minutes, stirring occasionally. Once thickened to your liking, blend the mixture until smooth and refrigerate it to cool completely. Remember to reserve two tablespoons of the puree for the glaze.
- In the bowl of your stand mixer, combine the all-purpose flour, sugar, salt, and instant dry yeast. Mix briefly to distribute the dry ingredients evenly. Add the warm milk, softened butter, and egg into the dry mixture. Knead it on medium speed for about 5 to 7 minutes, until the dough becomes noticeably smooth and elastic. Cover the bowl and let it rise until it doubles in size (about two hours).
- After the dough has risen, generously flour a clean surface and roll the dough out into a rectangle, approximately 16 x 12 inches. Spread the cooled strawberry filling evenly across the surface, leaving a border. Roll the dough tightly from the opposite edge, forming a log. Slice into 12 rolls and place in a greased baking dish.
- Cover the arranged rolls lightly and let them rise for another 30 to 60 minutes until puffy. Preheat your oven to 350°F. Bake for 20 to 25 minutes, or until golden brown.
- While the rolls cool, whip up the cream cheese glaze by beating together softened cream cheese, butter, powdered sugar, vanilla extract, and reserved strawberry puree until smooth.
- Once the rolls have slightly cooled, generously spread the glaze over the top. Serve warm.
Notes
Store leftover rolls in an airtight container at room temperature for up to two days. For longer storage, consider freezing them.
