Instructions
- Kick off your cookie-making adventure by preheating your oven to 350°F (175°C).
- In a large mixing bowl, combine your brown sugar, granulated sugar, and softened butter. Use a mixer or a sturdy spatula to cream them together until the mixture is light and fluffy.
- Next, beat in the eggs one at a time. Allow each egg to fully incorporate before adding the next.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry mixture to the butter mixture, stirring until everything is well combined.
- Fold in the rolled oats, chopped pecans, shredded coconut, and chocolate chips.
- Using a large spoon or cookie scoop, drop heaping spoonfuls of the cookie dough onto ungreased baking sheets.
- Place the baking sheets in your preheated oven and bake for 10 to 12 minutes.
- Once out of the oven, let the cookies cool on the baking sheets for a few minutes before carefully transferring them to wire racks to cool completely.

For chewier cookies, opt for quick oats instead of rolled oats. Your dough can be refrigerated for up to 3 days, allowing you to bake fresh cookies at your convenience.
