  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh raspberries, mashed (or use raspberry preserves)
  • 1 cup white chocolate chips or melting wafers
  • 1 tablespoon coconut oil or shortening (optional, for smoother melting)
  • Freeze-dried raspberry powder or crushed freeze-dried raspberries for garnish
  • White chocolate drizzle (optional)

Instructions

  1. Start by placing the softened cream cheese in a medium mixing bowl. Using a hand mixer or stand mixer, beat it together with the powdered sugar and vanilla extract until the mixture is smooth and well combined. Once creamy, gently fold in the mashed raspberries, ensuring they are evenly distributed throughout. To help the mixture firm up, cover and refrigerate it for about 30 minutes.
  2. Once your cheesecake filling has chilled and firmed up, it’s time to shape the balls. Use a tablespoon to scoop out approximately one tablespoon of the cheesecake mixture and roll it into a smooth ball between your palms. Place each ball on a parchment-lined baking sheet, ensuring they are spaced apart. After forming all the balls, pop the baking sheet into the freezer for about 1 hour.
  3. In a microwave-safe bowl, combine the white chocolate chips with coconut oil. Microwave the mixture in 20-second intervals, stirring well between each session until the chocolate is completely melted and smooth.
  4. Using a fork or toothpick, dip each ball into the melted white chocolate, ensuring it’s fully coated. Allow any excess chocolate to drip off before placing the coated ball back onto the parchment-lined baking sheet.
  5. While the white chocolate is still wet, sprinkle each ball with freeze-dried raspberry powder or drizzle a little more melted white chocolate over the top. After garnishing, place the baking sheet back into the fridge for at least 30 minutes.
