- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and prepare your muffin tin.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the milk, vegetable oil, eggs, and vanilla until smooth.
- Combine the wet mixture with the dry ingredients, mixing gently until just combined.
- Fill each muffin cup about three-quarters full with batter.
- Bake for 18 to 20 minutes until a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack.
Notes
Don’t overmix the batter to keep your muffins tender.
