If you love grilled cheese and crave a little kick, this Jalapeño Popper Grilled Cheese will be your new favorite comfort food!


Ingredients

  • 2 jalapeños, sliced lengthwise, seeds and membranes removed
  • 4 oz cream cheese
  • 4 slices bacon, cooked until crispy
  • 2 slices Monterey Jack cheese
  • 2 slices sharp cheddar cheese
  • 4 slices Italian or thick white bread
  • Chopped cilantro (optional)
  • Butter (for grilling)

Instructions

  1. Prepare the Jalapeños: Preheat your oven to 375°F (190°C). Slice each jalapeño in half lengthwise, remove seeds and membranes, and fill each half with cream cheese. Arrange on a baking sheet and bake for 25 to 30 minutes until semi-soft and golden.
  2. Assemble the Sandwiches: On two slices of bread, lay cheddar cheese. On the other two slices, add Monterey Jack cheese. Chop the baked jalapeños and distribute over cheddar slices. Add crispy bacon and cilantro, then top with remaining bread slices.
  3. Grill the Sandwiches: Butter the outer sides of each sandwich, heat a skillet over medium-low, and grill until both sides are golden brown and cheese is melted. Slice and serve.

Notes

If you’re sensitive to spice, taste the jalapeños after baking for heat level. Ensure bacon is cooked crispy for crunch.
