  • 1 cup Parmesan cheese (freshly grated)
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 4 cloves garlic (fresh, minced)
  • 1 teaspoon garlic powder
  • 1 yellow onion (finely chopped)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Start by preheating your oven to 375°F. This is the ideal temperature for ensuring your meatloaf cooks thoroughly and safely. While the oven is heating, line a baking sheet with parchment paper or grease a loaf pan with cooking spray. This will prevent the meatloaf from sticking and ensure easy cleanup.
  2. In a large mixing bowl, combine the ground chicken, freshly grated Parmesan cheese, panko breadcrumbs, eggs, minced garlic, and garlic powder. Mix these ingredients until they’re evenly combined, but be careful not to overmix to maintain a tender texture.
  3. Add the finely chopped yellow onion, Italian seasoning, salt, and pepper to the mixture. Use your hands or a spatula to fold these flavor-packed ingredients into the chicken mixture until just combined.
  4. Transfer the mixture onto the prepared baking sheet and form it into a 9×4-inch loaf. If you’re using a loaf pan, simply press the mixture into the pan for an even shape.
  5. Drizzle the top of the meatloaf with olive oil. Place the meatloaf in the oven and bake for 45–50 minutes or until the internal temperature of the meatloaf reaches 165°F.
  6. Once fully cooked, remove the meatloaf from the oven and let it rest for about 10 minutes. After resting, slice the meatloaf and serve warm.

Notes

For added flavor, consider toasting the panko breadcrumbs before incorporating them.
