  • 2/3 cup classic monk fruit sweetener
  • 2 tbsp heavy whipping cream
  • 1 oz cream cheese, softened
  • 1 tbsp lemon zest
  • 2 tsp lemon extract
  • 1/2 tsp pure vanilla extract
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1/2 cup + 2 tbsp coconut flour
  • 1 tbsp poppy seeds

Instructions

  1. Start by preheating your oven to 350°F (175°C). Line your muffin tin with 12 muffin liners.
  2. In a mixing bowl, combine the eggs, monk fruit sweetener, heavy whipping cream, cream cheese, lemon zest, lemon extract, and vanilla extract. Blend until smooth.
  3. Melt the butter in a separate bowl. Pour into the wet mixture and mix in the coconut flour, cream of tartar, baking soda, salt, and poppy seeds.
  4. Spoon the batter into the muffin liners, filling each about two-thirds full.
  5. Bake for 23-25 minutes or until golden, allowing them to cool before transferring to a wire rack.
