- 2 pounds russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes
- 14 ounces kielbasa sausage, sliced into ¼-inch rounds
- 2 cups sharp cheddar cheese, freshly shredded
- 1 cup mozzarella cheese, freshly shredded
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 ½ cups heavy cream
- ½ cup sour cream
- 2 tablespoons unsalted butter, melted
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- ½ teaspoon dried parsley
- ¼ teaspoon crushed red pepper flakes
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Peel and cube the potatoes, then parboil them for 8-10 minutes in salted water.
- In a skillet, brown the sliced kielbasa for 3-4 minutes on each side.
- Sauté the diced onion until translucent and add minced garlic, cooking for another 30 seconds.
- In a mixing bowl, whisk together heavy cream, sour cream, melted butter, and seasoning.
- Fold in the shredded cheeses into the cream mixture.
- In the baking dish, mix together parboiled potatoes, kielbasa, onions, and garlic, then pour the cheese sauce over.
- Layer with additional cheese on top.
- Cover with foil and bake for 30 minutes, then remove foil and bake an additional 20-25 minutes until golden.
- Let the casserole rest for 10-15 minutes before serving, garnished with fresh parsley.
