  • 2 pounds russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 14 ounces kielbasa sausage, sliced into ¼-inch rounds
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup mozzarella cheese, freshly shredded
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup sour cream
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Peel and cube the potatoes, then parboil them for 8-10 minutes in salted water.
  3. In a skillet, brown the sliced kielbasa for 3-4 minutes on each side.
  4. Sauté the diced onion until translucent and add minced garlic, cooking for another 30 seconds.
  5. In a mixing bowl, whisk together heavy cream, sour cream, melted butter, and seasoning.
  6. Fold in the shredded cheeses into the cream mixture.
  7. In the baking dish, mix together parboiled potatoes, kielbasa, onions, and garlic, then pour the cheese sauce over.
  8. Layer with additional cheese on top.
  9. Cover with foil and bake for 30 minutes, then remove foil and bake an additional 20-25 minutes until golden.
  10. Let the casserole rest for 10-15 minutes before serving, garnished with fresh parsley.

Notes

Use freshly shredded cheese for better melting and flavor.
