  • 3 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 3 cups semisweet chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups sweetened shredded coconut
  • 2 cups chopped pecans (toasted if desired)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking sheets with parchment paper.
  2. In a large bowl, whisk the flour, baking powder, baking soda, cinnamon, and salt.
  3. Cream the butter and sugars until light and fluffy.
  4. Add eggs one at a time and mix in vanilla until smooth.
  5. Combine wet and dry ingredients without overmixing.
  6. Fold in oats, chocolate chips, coconut, and pecans gently.
  7. Scoop onto baking sheets, leaving space for spreading.
  8. Bake for 12 to 15 minutes until edges are golden.
  9. Cool on sheets for 5 minutes, then transfer to racks to cool completely.

Notes

For best results, weigh your flour with a digital scale. You can also substitute some chocolate chips with white chocolate for a twist.
