Ingredients

  • 2 medium zucchini, sliced lengthwise
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • ½ cup shredded mozzarella
  • 1 teaspoon dried oregano
  • Fresh basil, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Arrange sliced zucchini in a single layer in the dish; sprinkle with dried oregano.
  3. Dollop ricotta over zucchini and spoon half of the marinara sauce.
  4. Layer remaining zucchini, ricotta, and marinara. Finish with mozzarella on top.
  5. Cover with foil and bake for 25–30 minutes.
  6. Uncover and bake for an additional 10–15 minutes until bubbly and golden.

Notes

For extra creaminess, mix grated Parmesan cheese with the ricotta before layering.
