Ingredients

  • 1 cup cottage cheese (low-fat)
  • 1 cup fresh blueberries, plus extra for garnish
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. In a spacious mixing bowl, carefully mix together the cottage cheese, fresh blueberries, lemon zest, honey or maple syrup, almond flour, vanilla extract, and a pinch of salt. Be gentle when adding the blueberries to ensure they remain whole, preserving their juicy burst in each protein bite.
  2. Once all the ingredients are well combined, cover the bowl with plastic wrap or a lid and place it in the refrigerator for 15 to 20 minutes to firm up.
  3. After chilling, take the bowl out of the refrigerator. Using a tablespoon, scoop out portions of the mixture and roll them into balls. Place each rolled bite on a parchment-lined baking sheet.
  4. If you prefer a warm exterior, preheat your oven to 325°F (160°C) and bake the bites for 8 to 10 minutes.
  5. For an extra touch, drizzle the cooled bites with honey and top with additional blueberries as a garnish.

Notes

Store in an airtight container in the fridge for up to 3 days. Can be frozen for longer storage.
