- 1 cup cottage cheese (low-fat)
- 1 cup fresh blueberries, plus extra for garnish
- 1 tablespoon lemon zest (from about 1 lemon)
- 2 tablespoons honey (or maple syrup for a vegan option)
- 1/2 cup almond flour
- 1 teaspoon vanilla extract
- a pinch of salt
Instructions
- In a spacious mixing bowl, carefully mix together the cottage cheese, fresh blueberries, lemon zest, honey or maple syrup, almond flour, vanilla extract, and a pinch of salt. Be gentle when adding the blueberries to ensure they remain whole, preserving their juicy burst in each protein bite.
- Once all the ingredients are well combined, cover the bowl with plastic wrap or a lid and place it in the refrigerator for 15 to 20 minutes to firm up.
- After chilling, take the bowl out of the refrigerator. Using a tablespoon, scoop out portions of the mixture and roll them into balls. Place each rolled bite on a parchment-lined baking sheet.
- If you prefer a warm exterior, preheat your oven to 325°F (160°C) and bake the bites for 8 to 10 minutes.
- For an extra touch, drizzle the cooled bites with honey and top with additional blueberries as a garnish.
Notes
Store in an airtight container in the fridge for up to 3 days. Can be frozen for longer storage.
