- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 tbsp lemon zest
- 1 cup lemon curd
- 1 cup fresh blueberries
- Whipped cream for garnish
- Lemon zest curls for garnish
Instructions
- Start by mixing the graham cracker crumbs and melted butter in a bowl until they are thoroughly combined. Press this mixture firmly into the bottom of the prepared pan.
- In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth. Add the vanilla extract and mix again. Incorporate the eggs, one at a time.
- Add the sour cream and lemon zest to the cream cheese mixture. Stir until everything is blended.
- Pour half of the cream cheese batter over the crust, add lemon curd and blueberries, then layer the remaining batter. Swirl to create marbling.
- Bake for about 45-50 minutes. Let cool at room temperature, then refrigerate for at least 4 hours.
Notes
Be sure to use softened cream cheese for a smooth batter. Cooling the cheesecake gradually helps prevent cracking.
