  • 1 zucchini, chopped

  • ¼ cup grated Parmesan
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried oregano
  • ¼ tsp red pepper flakes (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Begin by cooking the orzo according to the package instructions. Typically, this involves bringing a pot of salted water to a boil, adding the orzo, and cooking it until al dente. Once it’s ready, drain the orzo in a colander and give it a quick rinse under cold water to stop the cooking process. Set it aside while you prepare the rest of the dish.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil is hot, add the diced chicken breast seasoned with garlic powder, salt, and black pepper. Cook the chicken for about 5-7 minutes, occasionally stirring, until it is browned and cooked through. Remove the chicken from the pan and place it on a plate—this will allow you to sauté the vegetables next.
  3. Using the same skillet, add the remaining tablespoon of olive oil and heat it over medium heat. Toss in the chopped zucchini, red bell pepper, and broccoli florets. Sauté the vegetables for about 3-4 minutes, stirring occasionally, until they are tender yet still crisp. They should maintain their vibrant color, which makes the dish appealing!
  4. Once the veggies are cooked, return the chicken to the skillet along with the drained orzo. Stir in the lemon juice, lemon zest, dried oregano, and optional red pepper flakes for a touch of heat. Mix everything well and continue cooking for another 2 minutes, allowing the flavors to meld together.
  5. To finish, sprinkle the grated Parmesan cheese over the stir fry and give it a light toss to combine. The cheese will melt slightly, creating a delightful creamy coating for the orzo and chicken. Remove from heat and garnish with freshly chopped parsley for an added splash of color and freshness.
