Description
Indulge in the sunshine-filled goodness of Lemon Gooey Bars, a delightful dessert that effortlessly combines bright, zesty flavors with a satisfyingly gooey texture.
Ingredients
Scale
- 1 box yellow cake mix
- 1/2 cup melted butter
- 2 large eggs
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
Instructions
- Start your Lemon Gooey Bars by preheating your oven to 350°F (175°C). This ensures a consistent baking temperature from the moment the bars go in, helping them cook evenly. Prepare your baking pan by lining it with parchment paper or greasing it if you prefer.
- In a large mixing bowl, combine the yellow cake mix, one of the eggs, and the melted butter. Use a spatula or spoon to mix them together until you achieve a cohesive, slightly sticky dough. Press it into the bottom of your prepared baking pan.
- In another bowl, beat the softened cream cheese until it’s smooth and creamy. Add the remaining egg, powdered sugar, lemon juice, and lemon zest. Mix until well combined and smooth.
- Carefully pour the creamy filling over the cake mix base. Spread it evenly across the layer of dough.
- Place the assembled bars in your preheated oven and bake for about 35–40 minutes. They should be golden around the edges and have a slightly jiggly center.
- For the best texture and flavor, refrigerate the cooled bars for 30–60 minutes before slicing into squares.
Notes
These bars can be stored in an airtight container in the refrigerator for up to a week.
