Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, melted butter, and salt. Press into tartlet pans and bake for 8-10 minutes. Cool.
- Mix cream cheese and sugar until smooth. Beat in eggs one at a time. Add lime zest, lime juice, and vanilla extract.
- Spoon cheesecake mixture into crusts. Bake for 18-20 minutes until set.
- Prepare lime topping by whisking lime juice, lime zest, sugar, and cornstarch over medium heat until thickened. Cool and spread over tartlets.
- Chill tartlets for at least 2 hours. Garnish with whipped cream, lime, and mint before serving.
