  • ¼ cup fresh lime juice
  • 1 teaspoon vanilla extract
  • ½ cup lime juice
  • 1 tablespoon lime zest
  • ⅓ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon water
  • Whipped cream for garnish
  • Lime slices and fresh mint leaves (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, melted butter, and salt. Press into tartlet pans and bake for 8-10 minutes. Cool.
  2. Mix cream cheese and sugar until smooth. Beat in eggs one at a time. Add lime zest, lime juice, and vanilla extract.
  3. Spoon cheesecake mixture into crusts. Bake for 18-20 minutes until set.
  4. Prepare lime topping by whisking lime juice, lime zest, sugar, and cornstarch over medium heat until thickened. Cool and spread over tartlets.
  5. Chill tartlets for at least 2 hours. Garnish with whipped cream, lime, and mint before serving.
