Description
Crispy outside, tender inside these zesty patties are protein-packed, budget-friendly, and full of bold, smoky flavor.
Ingredients
1 tbsp tamari
2 (15 oz) cans black beans, drained and rinsed
½ medium red bell pepper, diced
½ medium yellow onion, diced
¾ cup old-fashioned rolled oats
1 medium sweet potato (350g), cubed
4 cloves garlic, minced
½ tsp fennel seeds
½ vegan “beef” bouillon cube or ½ tsp Better Than Bouillon
2 tsp smoked paprika
¼ tsp ground cumin
½ tsp ground coriander
Oil spray
Kosher salt, to taste
2 tbsp avocado oil
Juice of 1 small lime
1–2 tbsp agave syrup
Instructions
1. Preheat oven to 425°F. Line two baking trays with parchment paper.
2. Spread black beans on one tray. On the second tray, place sweet potatoes on one side and onion, bell pepper, and garlic on the other. Drizzle with oil and sprinkle with salt.
3. Roast beans for 15 minutes on the top rack and veggies for 15–20 minutes on the bottom rack. Allow everything to cool for 10 minutes.
4. Add roasted beans, veggies, oats, spices, bouillon, and tamari to a food processor. Pulse until the mixture holds together but still has texture.
5. Scoop out ⅓ cup portions and form into ½-inch thick patties. Place on a baking tray and spray both sides with oil.
6. Bake patties for 15 minutes.
7. Whisk together avocado oil, lime juice, agave syrup, and salt to make the lime drench.
8. Brush both sides of the patties with lime drench and return to oven for 5–10 minutes until golden and crispy.
9. Let patties cool for 10 minutes before serving. Brush with extra lime drench for added flavor.
Notes
Roasting the black beans helps prevent soggy patties.
Use a food processor carefully to avoid over-blending.
These patties freeze well. Reheat at 400°F for 10–12 minutes.
