Instructions

  1. Begin by preheating your oven to 350°F (180°C).
  2. While the oven is heating, warm the oil in a sizable skillet over medium heat. Once the oil shimmers, add the finely diced red onion. Sauté the onion for about five minutes, or until it turns soft and translucent.
  3. Add the ground chicken to the skillet with the onion. Use a spatula or wooden spoon to break apart the chicken, stirring continuously. Cook the mixture for 8 to 10 minutes or until the chicken is browned and fully cooked through.
  4. Once the chicken is perfectly cooked, sprinkle the fajita seasoning over the chicken. Stir the mixture well to coat the chicken in the spices, and sauté for one additional minute.
  5. Now it’s time to layer your nachos! Start by evenly spreading the tortilla chips on a large oven-safe skillet or baking sheet. Be sure to arrange them in a single layer.
  6. With your layers assembled, carefully place the skillet or baking sheet into the preheated oven. Bake for around 10 minutes or until the cheese has melted and is bubbling.
