Instructions
- Begin by seasoning your chicken breasts with a generous pinch of salt and pepper. Add a gentle sprinkle of dried oregano, and drizzle olive oil over the top. Preheat your grill or grill pan over medium-high heat, ensuring it’s hot enough to sear the chicken. Place the chicken on the grill and cook until it reaches an internal temperature of 165°F, flipping once to ensure even cooking. Once cooked, remove from the grill and let it rest before slicing.
- In large salad bowls, gather your greens as the base layer. On top, artfully arrange halved cherry tomatoes, cucumber slices, and thinly sliced red onion. Drizzle olive oil and lemon juice over the salad, tossing gently but ensuring everything is well-coated. Season lightly with salt, pepper, and an extra pinch of oregano to marry the flavors.
- In a medium bowl, combine Greek yogurt with grated cucumber. Make sure to drain the cucumber well to eliminate excess moisture. Stir in minced garlic, lemon juice, chopped dill, and parsley. Season with salt and pepper, adjusting the level of herbiness and acidity to your preference. Once mixed, the tzatziki should be creamy and slightly tangy, with just a hint of garlic’s warm bite.
