- 1 cup finely grated carrots
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1/4 teaspoon ground nutmeg

- For the Maple Frosting:
- 1/4 cup unsalted butter, softened
- 1/4 cup cream cheese, softened
- 1/2 cup powdered sugar
- 2 tablespoons pure maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of ground cinnamon for garnish
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing or lining it with parchment paper.
- In a large mixing bowl, combine the grated carrots, melted butter, brown sugar, egg, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Spread the batter into the prepared dish and bake for 25-30 minutes, checking doneness with a toothpick.
- While cooling, make the frosting by beating together softened butter and cream cheese, then adding powdered sugar, maple syrup, and vanilla until fluffy.
- Once cooled, frost the bars and garnish with cinnamon or grated carrots.
Notes
These bars can be made ahead of time and stored in an airtight container. They can also be frozen for up to three months.
