  • Author: Alioui
  • Total Time: 35 minutes
  • Yield: 12 muffins 1x

Description

Warm, fluffy muffins filled with sweet pears and topped with a crunchy cinnamon streusel.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter, melted
  • ½ cup buttermilk (substitute: ½ cup milk + ½ tbsp lemon juice)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup diced ripe pear (about 1 medium-sized pear)
  • ¼ cup brown sugar (for topping)
  • 2 tbsp all-purpose flour (for topping)
  • ½ tsp ground cinnamon (for topping)
  • 2 tbsp unsalted butter, softened (for topping)

Instructions

  1. Start by preheating your oven to 375°F (190°C). This ensures the muffins bake evenly and rise nicely. While the oven is warming up, prepare your muffin tin by lining it with paper liners or greasing it lightly with cooking spray or softened butter.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk these together until well blended.
  3. In a separate bowl, whisk together the melted butter, buttermilk, egg, and vanilla extract. Make sure the butter is melted but not hot.
  4. Pour the wet ingredients into the bowl of dry ingredients. Gently stir until just combined.
  5. Fold in the diced pear.
  6. In a small bowl, mix together the brown sugar, all-purpose flour, ground cinnamon, and softened butter until the mixture resembles coarse crumbs.
  7. Evenly distribute the muffin batter among the prepared muffin cups. Sprinkle the streusel topping generously over each muffin.
  8. Place the muffin tin in the preheated oven and bake for 18 to 22 minutes.
  9. Once baked, let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack.
