Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well. Incorporate vanilla extract and lemon zest.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough, roll into balls, and place on the baking sheet, pressing down slightly.
- Bake for 10-12 minutes until edges are lightly golden. Cool on a wire rack.
- Prepare the lemon cream filling by beating cream cheese, powdered sugar, lemon juice, and lemon zest until smooth.
- Assemble cookies by piping filling onto a cookie and topping with another cookie.
