Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 large apples, peeled, cored, and chopped
- 1/4 cup granulated sugar (for apples)
- 1 teaspoon ground cinnamon (for apples)
Instructions
- Start by preheating your oven to 350°F (175°C). In the meantime, generously grease and flour a 9×5-inch loaf pan.
- In a large mixing bowl, combine the dry ingredients: 2 cups flour, 1/2 cup granulated sugar, 1/2 cup brown sugar, 1/2 teaspoon salt, 1/2 teaspoon baking powder, and 1/2 teaspoon cinnamon.
- In a smaller bowl, whisk the eggs, then add melted butter, milk, and vanilla extract, mixing until fluid.
- Pour the wet ingredients into the dry ingredients, gently stirring until just combined.
- Chop the apples and toss them in a bowl with 1/4 cup sugar and 1 teaspoon cinnamon.
- Pour half the batter into the prepared pan, sprinkle half the apple mixture, then the remaining batter, topping with the last half of the apples.
- Bake in the oven for 50-60 minutes, checking with a toothpick for doneness.
- Cool the cake, then prepare the glaze by whisking powdered sugar, milk, and vanilla, drizzling it over the cooled cake.
Notes
For a slightly tangy flavor, consider using tart apples like Granny Smith instead of sweeter varieties.
