Instructions

  1. Start by preheating your oven to 350°F (175°C). In the meantime, generously grease and flour a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine the dry ingredients: 2 cups flour, 1/2 cup granulated sugar, 1/2 cup brown sugar, 1/2 teaspoon salt, 1/2 teaspoon baking powder, and 1/2 teaspoon cinnamon.
  3. In a smaller bowl, whisk the eggs, then add melted butter, milk, and vanilla extract, mixing until fluid.
  4. Pour the wet ingredients into the dry ingredients, gently stirring until just combined.
  5. Chop the apples and toss them in a bowl with 1/4 cup sugar and 1 teaspoon cinnamon.
  6. Pour half the batter into the prepared pan, sprinkle half the apple mixture, then the remaining batter, topping with the last half of the apples.
